Party’s Winding Down


Or is it just cranking up? 😉 I have to say, this has been a fun idea. So now I’m starting to wonder how an online book-launch party would work. Well, I can tell ya, I’d love the chance to find out! 😛

In true party fashion, I decided to make one of my specialties. In fact, it’s the one I complained about having to make for all the family get-togethers because … well, I CAN make other things, too. But this seems to be the biggest hit, and I confess, is also one of my favorites. Believe it or not, I’m talking about a jello salad. Except this one is more like a jello dessert.

The other thing it has going for it is it LOOKS very festive.

So here it is. From Debbie Valburg, an acquaintance from 20+ years ago:

    Cherry Salad Supreme
    1 pkg (3 oz) raspberry jello
    1 can (21 oz) cherry pie filling
    1 pkg (3 oz) lemon jello
    1 pkg (3 oz) cream cheese
    1/3 C mayonnaise
    1 CC crushed pineapple
    1/2 C whipped cream [I usually use more! :-D]
    2 C boiling water
    1 C tiny marshmallows
    1 C chopped nuts [I use walnuts]

In a 9x9x12 pan [I use a round glass serving bowl] dissolve raspberry jello in 1 C boiling water. Stir in pie filling. Chill till partly set. In a separate bowl, dissolve lemon jello in 1 C boiling water. Beat together cream cheese and mayo. Add lemon jello, whipped cream and fold into mixture. Also add pineapple and marshmallows. Pour into bowl with raspberry jello. Sprinkle top with chopped nuts. Chill.

If you try it, let me know what you think. I mean the combo of flavors—raspberry and cherry; lemon and pineapple—sounds ODD, doesn’t it? But … well, as I said, it has become a big hit with my family.
